– When animals receive only grass or roughage, they grow slower. But meat quality is very good, says the organic farmer Heinrich Jung from Åsnes in Hedmark to NRK. The fatty acid composition of the meat will be different, and the meat is a good omega-3 source like fish, he says.
Anna Haug, professor in Animal Science at the Norwegian University of Life Sciences supports Jung. Haug refers a research showing that omega-3 percentage is multiplied if cows eat grass.
– Figures from the USA show that the ratio of omega-6 and omega-3 fatty acids is 20 to 1 if the animals gets corn-based food. On the other hand, the ratio is only 2 to 1, when they have only grass, notes she.
